Capers in salt are produced on the island of Salina, in the Aeolian Islands. D.O.P. capers in salt are grown by exploiting the natural fertility of the volcanic soil, favouring it with limited interventions that exclude the use of fertilisers, additives and chemical manures. They give off very special and unique flavours and smells, giving every dish an intoxicating fragrance.
