Carus Vini is a boutique wine estate in the heart of Tuscany, located in San Casciano in Val di Pesa close to Florence. Carissimo family is an historical Italian family who runs the wine business since four generations. They bought Carus in 2011. Our goal is to reduce impact on environment creating harmony between agriculture and nature. In our 13.5ha (33 acres) vine surface we adopt modern technologies investing in research and innovation, without losing the target to produce high quality wines. The use of modern technology, combined with tradition and respect for the land, have allowed the achievement of EU organic certification, completed since the 2018 harvest with the complete elimination
of chemicals.
We have invested in reducing the footprint by:
In our cellar:
> Installing photovoltaic panels for electricity and
thermal solar panels for hot water;
> making our walls and roofs ventilated;
> installing an energy saving heat pump to stabilize
wine temperature;
In our vineyards:
> Experimenting Systemic Acquired Resistance
(SAR) to further reduce copper usage;
> Purchasing a 3 location Meteo Station to reduce
spraying.
We produce two lines of great value wines : The Territorials and the Family Selections.
The first ones refer to Chianti Classico and the second to our Supertuscan.
We cultivate native and international vines with an altitude between 190 and 310 meters above sea level. Our farm is on hilly slopes characterized by moderately clayey soils, rich in skeleton.
