This is a typical product of the Ossola valleys. The name "mortadella" can be deceiving because it recalls the famous mortadella from Bologna. However, this cold cut has nothing to do with it. In fact, it is a raw sausage, with a texture very similar to the one of our local salami. Another peculiarity of Ossola’s mortadella is the addition of a small percentage of liver and the aromatization with Vin Brule (wine cooked with spices). We also tie it by hand and fold it in half: a distinctive shape that becomes evident when sliced. Try it with some bread or breadsticks in your aperitivo and pair it with a good Piedmontese cheese!
